Biscotti Basic Recipe (makes about 72)
350g plain white flour
2 tsp baking powder
250g golden caster sugar
3 eggs beaten
Then the fun begins!!
Add your flavourings and contents!
Nuts, chocolate, lemon zest, mixed spice, raisins, cranberries! Whatever takes your fancy!
To make the lemon and pistachio ones I added 3 tbs of lemon juice and the zest of two lemons (it was necessary to then add bit more flour as it did get a bit sticky but all good! Trial and error cooking) and 100g of pistachios. I added 50g of dark chocolate, chopped to half the biscotti mix.
1. Heat oven to 160C. Line two baking sheets with baking paper. Put flour, baking powder, zest and sugar in a large bowl and mix well. Stir in eggs and zest until the mixture starts forming clumps then bring the dough together with your hands. It will seem dry at first but keep kneading, it will come together. Add fruit, nuts, lemon juice (your choice at this point) and distribute evenly.
2. Turn dough out onto lightly floured surface, split into four pieces. Roll each piece into a sausage about 30cm long. Place two on each tray, well spaced apart. Bake for 25-30 mins until the dough has risen and feels firm to the touch. Remove from oven and turn oven down to 120C.
3. Using bread knife cut diagonally into slices about 1cm thick, then lay slices flat on sheets. Make for another 15 mins on each side until dry and golden. Tip onto wire rack to cool!
